Whether you have homemade or store bought focaccia, it's good for more than just dipping. This caprese focaccia sandwich is incredibly easy and full of bright, fresh flavors.

I'll be honest, I am not generally that much of a sandwich person. I do quite enjoy a good grilled cheese, and have made some tasty variations like my eggplant spinach grilled cheese and 'jammin' Jamaican' chicken grilled cheese.
Plus, I have a couple favorites in local shops, and have adapted some to enjoy at home like my goats cheese prosciutto croissant but it's not that much of a regular lunch for me.
When I have freshly made lemon thyme focaccia, however, it's only right to make some in to a delicious sandwich. Especially when it's still fresh, I love making this simple sandwich, loaded up with Italian favorites.
When you have fresh and especially homemade bread, I think it's best to keep things simple and so for this sandwich, I've kept it to just a few ingredients, drawing on caprese flavors.
Arugula pesto is a favorite with pasta in our house, so it's easy for me to make sure there's a little leftover for this.
How to make this caprese focaccia sandwich
- Cut a sandwich-sized chunk of focaccia and slice it through the middle.
- Slice some tomato and mozzarella.
- Spread the bottom side of the bread with pesto, top with mozzarella and tomato.
- Put the top half of the focaccia on top and enjoy.
As with so many things with just a few ingredients like this, make sure what you use is as good as you can. If you can find heirloom tomatoes, I'd definitely recommend them as they are generally much more flavorful and with a denser flesh. If not, find the best you can.
Similarly, not all mozzarellas are the same: try to avoid the firm ones wrapped in plastic that are best for grating. Instead, look for fresh mozzarella in a tub with liquid. And I appreciate not everyone will have homemade pesto, but it doesn't take long to make and is perfect for pasta as well. If you can't be persuaded, though, again find as good as you can.
So find the best ingredients you can, and build your own caprese focaccia sandwich. It's incredibly easy to make, but is deliciously good. I'd certainly happily have it for lunch again soon.

Caprese focaccia sandwich
Ingredients
- 1 chunk focaccia (assumes ¼ of my homemade focaccia recipe)
- 2 slices tomato
- 2 slices mozzarella
- 1 tablespoon pesto approx
Instructions
- Cut a sandwich-sized chunk of focaccia and slice it through the middle.
