Caprese focaccia sandwich

This caprese focaccia sandwich is really easy to make, but full of bright colors and flavors.

Ingredients

  • 1 chunk focaccia (assumes ¼ of my homemade focaccia recipe)
  • 2 slices tomato
  • 2 slices mozzarella
  • 1 tablespoon pesto approx

Instructions

  • Cut a sandwich-sized chunk of focaccia and slice it through the middle.
  • Slice some tomato and mozzarella.
  • Spread the bottom side of the bread with pesto, top with mozzarella and tomato.
  • Put the top half of the focaccia on top and enjoy.
