This rum sour is easy to make, not too sweet and with a nice depth of flavor from the dark rum.

Ingredients

dark rum

lemon juice
freshly squeezed

fl oz
coconut sugar simple syrup
or demerara, see notes

dashes
aromatic bitters
ie Angostura or similar; or can use orange, optional

egg white
(1 egg white is approx 2 tbsp/30ml/1oz)

Instructions
Add rum, lemon juice, simple syrup, bitters and egg white to a cocktail shaker then shake well.
Add plenty of ice, shake again then strain into a glass. Optionally, top with a couple extra drops of bitters.
Notes
I'd suggest using a rocks glass for this but you can use other styles, as you prefer.
