Cut the potatoes into an even thickness. You can leave skin on, if you prefer, but you typically peel first. Halve larger slices.

Try to fill the gaps in your dish as best you can. Top the potatoes evenly with thyme and garlic.

Add some cream so that the potatoes are barely covered. Then repeat the layers of potato, garlic and cream.

Bake until the potatoes are tender and you have a gently browned layer of cream on top.
It makes a perfect side to lots of meals, especially roasts.
