Lemon madeleines 

Madeleines are such a classic French bakery item, somewhere between a mini cake and a cookie. They're a lot easier to make than you might think, and they taste so wonderfully good fresh out the oven.

Let’s get started!

Gather your ingredients

These are made with everyday ingredients like butter, sugar, flour and egg. Plus of course lemon to give them their lovely bright flavor.

Mix the batter then chill

Start by whisking together the egg and sugar to get it light and foamy, then add in the other ingredients. Once mixed, chill the batter for around an hour.

Scoop into the buttered tin

Don't fill the moulds too full or spread the mixture out -they will fill out during baking.

Bake!

They bake up quickly and you should see slightly browned edges and a nice 'hump' in the middle. Let cool slightly before dusting with sugar.

Perfect to enjoy alongside a cup of tea or coffee (or whatever excuse you want to find!)
