I grew up eating the most bland tasting summer squash that my mother would just boil, and maybe the occasional butternut that received a similar treatment, and as a result I've always sworn off squash dishes in general. Recently I had a butternut bisque that was AMAZING, discovering that squash can actually be TASTY and now I'm adding all sorts of squash things like this to my list of things to try!

I agree with your initial comments! I was usually disappointed with acorn squash but I was treating it like butternut! It's not that I dislike it, I just prefer butternut! I will have to try your theory because this salad sounds amazing! All of my favorite ingredients! Thanks for sharing!

Thanks so much for this delicious recipe!! And great tips on cutting the acorn squash, it worked perfectly! Honestly, I typically avoid buying whole squashes like this because of how hard they are to cut, but now you've saved me all the money I spend on their pre-chunked versions 🙂
