In reply to Jason. Hi Jason, glad you are looking to make this. There's not really much to say for this as the squash largely cooks in the stock. Just try to not have it brown in the early stages - make sure you stir regularly and if the bacon, onion or squash is getting burnt at all, reduce the heat and/or add a little oil. You'll know that the squash is done when it's tender to the knifepoint. You don't really have to worry about overcooking the squash, it will just get a bit softer. Hope you enjoy!
