I haven't tried myself, but as long as the pork wasn't previously frozen, I think yes it should work fine, the ingredients aren't really ones that deteriorate with freezing.

I made this last Christmas for 2 of us meat eaters at the table of non meat eaters. I thought it was absolutely delicious. I prepared the pork fillet a couple of weeks ahead and froze it, then defrosted it 2 days before Christmas, made the stuffing a day or so ahead and assembled it on the day. It was so yummy we ate it all! What gluttons. It will feature this year too. Different family!

Thanks, Loretta. Yes the pork cuts really easily as it's so tender, and it helps just 'looping' the tie rather than doing knots the whole way along as I've suggested so it falls away as you cut.
