My toddler son, like most toddlers, can be a little set in his ways with food at times. He most definitely has his favorites which he'd eat all the time given half the chance. With breakfast, for a while it was all about pancakes, then banana oatmeal. Now we mainly switch between the two.
However I am always on the lookout for new ways to sneak in some different things and make breakfast more varied for me, while still appealing to his need to have things more or less the same. Thankfully now we have a waffle iron, he's embraced waffles.
These blueberry granola waffles are a great breakfast option, with healthy blueberries and a mix of wholegrains from the granola. Oh, and they're incredibly delicious and easy. What more could you need to start your day?
I mulled over getting a waffle iron for ages and now I have, I really wonder why I didn't get one sooner. You can get a pretty decent one cheaply and the smell alone of waffles cooking in the morning is enough to get you going, let alone the taste.
Also, having made pancakes for a while, I have to say I'm loving how much more hands-off the cooking is for waffles. I can set the timer and make my coffee while one cooks rather than having to watch them constantly. We still love pancakes, don't get me wrong. But I'm finding I can be just as creative with what I put in waffles, with easier cooking.
Granola is great to mix in with other things such as these blueberry granola waffles. I love the fact it can add a great range of ingredients but you only measure one thing, and that's definitely the case with the Quaker® Real Medleys SuperGrains Granola I used in these - it's a fantastic mix of seven super grains and seeds, fruits & nuts. So rather than just the wholegrain wheat and oats as I've added in other waffles I've made, I'm also adding various seeds and grains.
How to make blueberry granola waffles
These blueberry granola waffles are easy to make, with the batter only taking a few minutes to mix up then you pour it in the waffle iron, set the timer and leave it to get on with it. You can speed things up even more by mixing the dry ingredients the night before, so in the morning all you do is whisk the egg and milk and add them in.
One of the selling points for my son with waffles was I let him top them with a bit of maple syrup. Hey, if it works - these are pretty balanced all round. Being able to eat with your fingers is an added bonus, too. Although if I'm not running off, I really like them topped with some more blueberries and granola.
The granola in the waffles goes slightly chewy but you get all it's nice flavor coming through, so adding the contrasting crunch on top goes so well.
Make ahead tip
To make these even easier, you can make up a bigger batch and allow the ones you don't need to cool. Then either refrigerate them overnight or pop them in a freezer bag and freeze them if you don't need them for a few days. Defrost them in the fridge overnight and re-heat them in the waffle iron for a minute when you want them.

Blueberry granola waffles
Ingredients
- 1 cup all purpose flour 140g plain flour
- 1 cup whole wheat flour 140g
- 1 cup granola 100g approx, suggested Real Medleys Supergrains blueberry pecan
- 1 tablespoon baking powder
- 1 pinch salt
- 2 eggs
- 2 cups milk 480ml
- 2 tablespoon vegetable oil
- 1 cup blueberries 160g, fresh, or frozen defrosted
- maple syrup confectioners sugar, blueberries, granola or as you prefer to top
Instructions
- Mix together the all purpose and wholewheat flours, the granola, baking powder and salt in a medium-sized bowl. Note - you can do this ahead of time and keep covered.
- Pre-heat your waffle iron.
- In a separate bowl, whisk together the eggs, milk and oil. Add this mixture, along with the blueberries, to the dry ingredients and mix well. being careful not to break up the blueberries.
- Pour approximately 1 cup of the mixture in to the pre-heated waffle iron. Flip (if possible, depends on model) and set the timer for 4 minutes.
- Carefully remove with plastic-coated tongs and serve, topped with your choice of maple syrup, blueberries, granola, confectioners sugar or the whole lot!

I would recommend it, Hilda, for variety sake as much as anything else! You can definitely vary what you do with waffles and these blueberry granola ones are a great place to start (though I guess I would say that!)
