So as I mention in the post, it is best to cook the beets yourself if you can so that they are not too soft - they will likely soften a bit with the pickling liquid, so canned beets being softer, have a higher chance of breaking up. But otherwise, they should work. Also, just be sure that they are only cooked rather than already pickled.
