Sorry to hear they didn't work out for you, I haven't heard of the jam burning like that. I tend to use a silicone baking sheet rather than parchment not sure if that helps. And if you are not sure about the cheddar flavor being strong enough, you could add in a little parmesan or switch eg to gruyere.

I made these for a holiday gathering. I made as directed but the fig jam became very dark, nearly burnt on the bottom of the pastry. I baked them on parchment paper at 400F for 15 min. The tops were a nice, lightly golden color. I tried to convince myself that maybe the fig jam had just “caramelized” but they still had somewhat of a burnt taste. I used a sharp cheddar cheese but they still seemed to be bland. Not sure I would make these again.
