In reply to John. I can see that broiling helps for the cheese, and if definitely an option. The only thing is you can potentially end up with browned cheese but cold beans whereas in the oven you get a bit more even temperature of the whole thing, but both work.

Meeting the cheese under a broiler so it gets a few little btowned spots makes them slightly tastier imho.

I was so curious when I saw the title in the preview. I had never heard of molletes. These look right up my alley. Can't wait to try them.
