I haven't tried them but I don't really see any reason why it wouldn't work. I have seen a few keto simple syrups so you could adapt the same principle of adding in the ginger to infuse the mixture.

It can vary a little, but certainly a couple of weeks, quite possibly longer. Great way to use up the ginger!
