I was looking for a way to use some mascarpone I had leftover from a recipe. The last time I had leftover mascarpone- I ended up throwing it away because I was not sure what to do with it. I had all of the ingredients for the recipe except pine nuts. So, I picked up some pine nuts at Trader Joe's and I am so glad I did. They were the perfect addition to the dish! My cheese mixture seemed very thick- so I ended up adding more pasta water than was probably necessary. Next time I will add a bit more lemon juice to the cheese mixture and stir, stir, stir before adding more water. I added too much pasta water and it was a bit.... well, watery. Totally my fault! As the finished pasta sat for a bit, it did thicken up- but just be careful not to add too much of the pasta water! I had some fresh asparagus I could have added but was not sure if that was a good idea. Now that I have made this, I will not be afraid to add more vegetables if I have them on hand. I loved the way you added the peas to the pasta water as it was cooking- clever! I could have added the asparagus to the water a minute or two before the peas. Cuts down on the number of dishes/pans. Overall- this was an easy dish that I will make again! Thank you!

What a yummy and easy pasta! My family and I enjoyed this for dinner and we loved how delicious this recipe was! I love finding new ways to make pasta for dinner! Can’t wait to make this again!
