In reply to Lucia. I haven't tried, but I think probably the best substitute would be coconut sugar since it's a similar texture. Then next best might be maple syrup from flavor perspective, though being liquid may make it a more runny filling. You can also reduce the sweetness a little, but I do feel like you need something.

Really like how easy this is to make and that crust looks so flaky and delicious. I'm going to have to make this for my family.
