    Easter traditions

    Easter seems to be a bigger celebration in the UK than the US and it means one thing for kids: chocolate eggs. I have many memories of seeings row on row of brightly packaged chocolate eggs in the local stores.

    I also remember eating way too much chocolate getting through the ones I received, too. Though I at least spread it out over a while, since I have never been able to eat much chocolate at once. (I know, many would say that's a good thing).

    I'm fine with some chocolate and/or other treats for my kids now and then, but I try to avoid them having a sugar rush-and-crash if I can avoid it. Plus, I may as well take advantage of the fact they enjoy fruit for as long as I can.

    So I have now and then tried slightly healthier takes on seasonal treats, like these cute Easter treats. Yes, I know, these won't cut it when my boys are teenagers, but for now they're more than happy so I'm going with it. Plus, they're really tasty and easy so why not.

    Eggs have been associated with Easter for years but I'm not sure when they nearly all became chocolate in UK culture. I was actually a little surprised when we first moved that it isn't more the case in the US given Halloween etc. I did find this interesting slightly tongue-in-cheek article which has some thoughts.

    Getting the kids involved

    These are something you can easily get the kids involved in helping to make, too. Obviously, some tasks are easier for older kids, but even younger kids can largely make the nests themselves and the eggs, too, with a little help.

    True, the knifework on the strawberries is a little more involved and may be one for grown ups or at least older kids. I admit I like the excuse to play with my food doing that part myself. (Just don't tell.)

    The white chocolate-covered blueberry 'eggs' are something I made before in my dessert gnocchi and they are  so easy and tasty. I could happily eat a number of them just as they are (even me who is not that much of a white chocolate fan normally). Along with some strawberries, even better.

    I've tried to explain how I made the strawberry chicks and show photos of most of the steps. The video also shows you how they come together, though of course get creative if you have other ideas to get the general effect.

    If you're looking for more fun Easter treats to make with or for kids, these cute carrot patch cupcakes would be great.

    I appreciate they are not totally chick-like but I think they are more or less recognizable. And anyway, strawberries are always a win in our house at least, even if not.

    These healthier Easter nests may be a little rough around the edges, but they are easy, fun, tasty, and relatively heathy which I for one call a win.

    Healthier Easter nests

    Bring a little fun without all the indulgence to your Easter table with these cute fruity chicks and nests.

    Ingredients

    • 5 tablespoon oats approx (can use quick or whole/rolled oats)
    • 2 tablespoon desiccated coconut
    • 1 tablespoon almond flour
    • 1 ½ tablespoon cocoa powder (unsweetened)
    • 2 tablespoon coconut oil melted
    • 1 tablespoon maple syrup
    • 1 oz white chocolate 30g, approx - won't use all
    • 12 blueberries
    • 6 strawberries

    Instructions

    • Place the oats, coconut, almond flour, cocoa powder, melted coconut oil and maple syrup in a bowl and stir well so that everything is well combined. Spoon the mixture into 3 cupcake/muffin cases, press down gently and make a slight well in the middle. Place in the fridge to harden up.
    • Melt the white chocolate (I generally put it in a microwave-safe bowl and place in the microwave for 15-20 sec at a time, stir in between then repeat until just melted). Add the blueberries one at a time and use a teaspoon to roll them and cover with the chocolate all over. Remove by pulling to one side of bowl, trying to avoid excess chocolate, then transfer to a cookie sheet or parchment to harden. Repeat with all the blueberries then set aside to harden (or put in fridge).
    • For the strawberry chicks, try to use slightly larger strawberries for the bodies and smaller ones for the heads, ideally even sizes. Remove the stem ends from all.
    • For the bodies, remove a thin slice on two opposite sides (the wider ones, if wider one way than the other). One side is so that it sits flat, the other to give a flat side for the head to sit on. Then, cut small little cuts into the tip to make it look slightly like feathers on a tail. If you like, you can add additional slits for wings and make a little thinner by the tail on top (be as creative as you feel up to!).
    • For the heads, cut a thin slice off one side to make it flat to sit on the body. Break a couple cocktail sticks and press them into the flat top you cut out of the body pieces then place the flattened side of the head part on top.
    • Use the end of a cocktail stick, dip it in white chocolate and then dot eyes onto the strawberry chick heads. Leave to firm up.
    • Once the 'nests' and 'eggs' have hardened, add three of the blueberries to each nest (you can smooth off any excess chocolate that may have collected). If you prefer, you can take the hardened nest out of the casing and place the chicks on top or alongside.

    If you prefer, you can use semi-sweet chocolate rather than the combination of cocoa powder, coconut oil and maple syrup. While the combination above is probably a little healthier, it does tend to become soft more easily than chocolate so needs to be kept chilled unless eating soon. 
    You can also use a breakfast cereal instead of the oats/coconut/almond flour.

      Super cute, Caroline! I have made "nests" using chow mein noodles and melted chocolate. I like your healthier version. Strawberry chicks are a great idea too. 🙂
