In reply to D. They may well work cold, but I think I would probably suggest re-heating is better. You could place under the broiler/grill or in a dish covered with foil in a low oven for a few minutes if it's easier not to have to grill again.

I’d like to cook these ahead of time to bring to a tapas party. Can these be served cold or should they be reheated before serving?

I never tried this pinchos morunos and with all these spices sounds like a dream tapas. Since you mentioned it I might try with lamb as well.
