I'm glad to hear it brings back good memories! Yes you can use other breads as well but pita (or pita-like) are certainly more common. And yes, such lovely textures and flavors.

I was in Muscat, Oman, a couple of weeks ago and had this salad and it looked so much like yours. The bread was different, not pita, but it was nice and crispy like yours.
