Oh gosh, so happy I found this recipe. I had something similar while in Catalunya countryside a few years back. Have always wanted to make these at home. The flavour is so beautiful!

We have a lot of the ingredients growing in our garden so I was excited to make these slow roasted veggies recipe. It did not disappoint. I will make it again.

So delish! We love adding these roasted veggies to our sandwiches and as a side with eggs. The best advice was to take it slow - so glad we followed that. Thanks!
