Sounds like a tasty meal! We also like it with larp/larb gai (Thai/Laos chicken salad) which is also great when it's that bit warmer. That said, we had both recently for lunch we like them so much.

As I say, I find it pretty much impossible which is why my salad isn't "green" but I find the least-ripe I can and it's still pretty good. I have better luck with under-ripe/green mango which is also common in this salad. Either way, enjoy!

I have never had papaya salad but looking at how delicious your salad looks, I need to change that and make this as soon as possible! I'm not sure I've ever seen green papaya, but now I have to look for it!
