This is perfect for the summer! I have never made chimichurri but I have always wanted to! I have so many herbs in my fridge that will go bad within the week so you gave me a great idea!! 😉

I love chimichurri. I have never thought of using it for a marinade for beef skewers. BRILLIANT! I am eating clean this week to make up for my past indulgences. This will work beautifully in my meal plan. I can't wait to make it.

Thank you so much for bringing this mouth watering dish to Fiesta Friday! I love the flavor combinations and marinating the meat in chimichurri sounds super delicious! I am drooling looking at the photos of those skewers!
