I know some people are through and through cocktail drinkers, others wine, beer or their favorite spirit. Many have their favorite then an alternate for warmer or colder weather, or just because.
My point is, many people have their go-to style of drink, if not a specific one. For most of my life, mine has been beer (my dad, as a former brewer, is no doubt happy). There are times when I get in to wine a little more, but cocktails are much more rare.
Now and then, though, a cocktail is just the thing. A friend recently took my out as a belated celebration for my birthday, and that was a cocktail night. Drinks with friends on mother's day? Cocktails. And super warm days when you need a drink in the afternoon?
Frozen cocktails.
Much as we change up our beer supplies to meet the season, for really hot days something like this frozen pineapple daiquiri is so much better. Ideally sipped on next to the pool, I'm sure, though that's not something we have the option on, sadly (at least not at home).
One of the reasons I made this is I froze extra grilled pineapple when I made my grilled pineapple ice cream, and while I was tempted just to make more ice cream (as it's that good), I decided to experiment.
I debated making a frozen pineapple mojito (as I do love both regular ones and variations like my Pimm's mojito), but then when I saw today was daiquiri day, decision was made.
What is a daiquiri?
A classic daiquiri is considered one of THE classic cocktails made from white rum, lime juice and simple syrup. It's usually shaken with ice and strained into an ice cold glass. It was originally made in the late 19th century in Cuba and became an instant hit, spreading to Havana, New York then the world.
These days, these is a huge list of variations, beyond the minor tweaks that included the version that was one of Hemingway's favorite drinks. Fruit versions, like this, are more and more common and for me take me back to a favorite bar I went to with friends in Madrid.
One place in particular was just a small bar that didn't make a huge range of cocktails - they stuck to the classics - but they made them really well. It was a formula that clearly worked as we happily came back a few times, as did others.
How to make a frozen pineapple daiquiri
This is such an easy cocktail as all you do is put the frozen pineapple, ice, rum, lime and sugar in a blender and blend until smooth. I made this with frozen grilled pineapple which I highly recommend as while you might get the odd flecks of grill marked pineapple, I think the flavor is much better.
If you don't have frozen grilled pineapple, I do recommend freezing your own ripe pineapple when you have too much to use in things like this and smoothies. Perfect way to make sure it doesn't go to waste, too.
Not only is this frozen pineapple daiquiri incredibly easy to make, it's also not overly sweet and wonderfully cooling and refreshing. But there's just enough kick to let you know you don't want too many. But another, though, maybe...

Frozen pineapple daiquiri
Ingredients
- ¾ cup frozen pineapple in chunks, approx
- ¾ cup ice cubes
- 1 ½ oz white rum
- 1 tablespoon lime juice
- 1 tablespoon sugar
Instructions
- Put all of the ingredients into a blender and blend until smooth. Pour into a glass (that ideally has been pre-chilled).
