I'm pretty sure mojitos were the first cocktail that I got in to. Well, after gin and tonics which I have my parents and grandparents to thank for an early introduction to. They are kind of a British institution, after all, and were a standard for us before Sunday dinner.
As I've mentioned before, though, mojitos became a bit of a favorite when I lived in Madrid. Particularly going to the hidden Cuban bar, they tended to be made strong and not too sweet. I loved the fresh mint flavor and less sweet than many other cocktails was also good from my perspective.
Fruity twists on a classic cocktail
While the Cuban bar only had traditional mojitos, I later came across a few variations in New York (like ginger mojito), and have played around with them since. Many have fruit in them, which works so well with the mint. A watermelon mojito was one I first made a while ago that's perfect for summer, as is my more recent grilled peach mojito.
But while it's a very fresh cocktail, mojitos can easily be adapted to be good for more than just summer. And this pomegranate mojito is a perfect example.
Pomegranate's tartness pairs very well with both the lime and mint. And while you can get pomegranate juice year round, it's classically a winter fruit.
Pomegranate has that rich red color and slightly more depth of flavor than summer variations of this drink, making it perfect as a festive cocktail. Hey, you could even serve it in a ghoulish glass and it would look pretty great as a Halloween cocktail as well. Bat's blood, anyone?!
I'll leave you to make your own rationale to serve this and ways to make it look pretty, but it's definitely a cocktail I'd recommend as something that little different, but easy to enjoy.
Adapting to make a batch cocktail
Unlike my other fruity mojitos, this one has no preparation for the fruit part, making it perfect to serve as a batch cocktail for a party. If you do make it in larger quantities, a couple suggestions:
- Make a simple syrup rather than just adding sugar as the larger quantity of sugar will be harder to get it to dissolve.
- You could even make a mint-infused simple syrup by adding mint leaves as it warms to add to the mint flavor. I'd still add some mint leave as well.
- I'd recommend juicing the limes and adding the juice rather than muddling large quantities of lime slices. It will both be easier and spread the flavor better. Less 'bits' is also easier to serve.
- Mix the crushed mint, lime juice, simple syrup, rum and pomegranate juice in a pitcher with ice, ready to serve. You can simply multiply up quantities of everything, as needed.
- Don't add the soda water to the pitcher but instead top up each glass. That way, you don't loose the bubbles.
- Save some lime slices and mint to garnish each glass for a nice finishing touch.
Can you make this pomegranate mojito a mocktail?
Given the tasty flavors of pomegranate and mint in this drink, it's an easy one to serve as a mocktail. You could easily just skip the rum and serve everything else. Alternatively, you could swap the soda water for ginger ale for a little added flavor, but I wouldn't say it was strictly needed.

Pomegranate mojito
Ingredients
- 10 mint leaves
- 1 tablespoon sugar
- ½ lime
- 1 ½ fl oz white rum
- 3 fl oz pomegranate juice
- 2 fl oz sparkling water (or more/less to taste)
Instructions
- Cut the lime half into 4 wedges. Place the lime wedges, mint leaves and sugar in the bottom of a glass and muddle them together.
- Top up the glass with ice then pour over the rum. Add the pomegranate juice then top up the glass with sparkling water. Stir gently to mix.
