Champagne mojito

This twist on the classic rum and mint cocktail adds an extra layer of flavor and makes it feel that bit special. Fresh and perfect for sipping.

Ingredients

  • 6 mint leaves
  • ¾ fl oz lime juice
  • ½ fl oz simple syrup (1 part water, 1 part sugar)
  • 1 ½ fl oz white rum
  • 3 fl oz champagne approx (or other sparkling wine)

Instructions

  • Put the mint leaves, lime juice and simple syrup in the bottom of a tall (Collins) glass. Muddle them together to bruise the mint and release their oils.
  • Add some ice and the rum and gently stir. Top up the glass with champagne.

Notes

To make a larger batch for around 8 glasses - muddle approx 50 mint leaves (just the leaves, not on stems), 6oz (180ml) lime juice and 4oz (120ml) simple syrup in a jug. Add 12oz (360ml) rum and stir. Chill this mixture until needed (ideally no more than a couple hours so the mint doesn't wilt too much) Divide this base mixture between 8 glasses, each with a few pieces of ice. Top up the glasses with champagne (should use roughly the whole bottle).
